Roast Pumpkin, Quinoa + Kale Salad

This salad is a new fave of mine and it’s absolutely DELICIOUS. Super easy to whip together and is perfect on its own or as a side salad.

Ingredients:

  • Roast Pumpkin (I roast pumpkin slices in advance and then they are ready to add to any salad)
  • Cooked Quinoa
  • Feta
  • Shaved Parmesan
  • Kaleslaw (you can buy this from any grocery store pre packed – or to make your own you simply slice up Kale, Purple Cabbage and Carrot, mix with a teaspoon of mayo or plain yogurt)
  • Pepitas
  • Sesame Seeds
  • Pinenuts

I honestly just add as much or as little of each element to suit my taste (obviously LOTS of cheese haha).

It works well with both chicken and fish for those that would like to add a meat to the dish. However for lunches I just eat it on its own, it is such an easy, tasty and simple meal for us busy Mamas!
